Chocolate Vimto Cake - Recipe

It's been a while since I made a cake, in fact its possibly been a while since I baked anything other than fairy cakes with Jack. So when I spotted the #collectivebias shop which involved making something with Vimto I thought this was the perfect chance to get a little creative with baking, so I set about using a vimto recipe. I'd seen a perfect Chocolate Cola recipe over on the BBC website which I edited a little to create the Chocolate Vimto cake. 
So first, I set about checking all of the ingredients, crossing off what we already have and shopping for the remainder. We headed to Sainsburys for the remainder of the ingredients. Sainsburys is pretty much the easiest store for us to get too so was the perfect choice. 


Ingredients...
For the Cake:
250g self-raising flour
250g butter
300g golden caster sugar
250ml fizzy vimto
125ml milk
3 tablespoons cocoa
2 eggs
1 teaspoon vanilla extract 
A pinch of bicarbonate of soda

For the Icing:
200g icing sugar
100g butter
2 tablespoons fizzy vimto
2 tablespoons cocoa

Method...
1. Preheat your oven to Gas Mark 4/180C/350F, this will be ready when your mixture is complete.
2. Sieve the sugar,cocoa, flour and bicarbonate of soda into your mixing bowl.
3. In a saucepan melt together the butter and vimto, then add this to your mixture
4. Beat the eggs, place these into the mixture along with the milk and vanilla extract. 
5. Mix everything together and pour this all into your cake tin. 
6. Bake for 40 minutes, you can check it by placing a skewer through the centre to see if it comes out clean, if not place your cake in for a further 5 minutes. 
7. When complete, leave the cake to cool for 15 minutes in this time you can create your icing. 
8. In the saucepan place the remainder of your butter, vimto and cocoa and melt together. 
9. Place your icing sugar within your mixing bowl and place the above mixture on top and mix together. 
10. Pour your icing over the cake whilst still warm to ensure all is covered.

  4. I've not tried the Cola Cake Emma so couldn't comment, but I was a bit sceptical so only took a small piece, then went back for more as it was lovely!

  5. I've never drunk Vimto so I can't imagine what this would taste like, but looks good.
